Yes, they will eat them. ALL of them. Get plastic plants.

Most freshwater fish don’t eat plants. Goldfish do eat plants, but the other ones I couldn’t list off the top of my head.
Plants with tough leaves are less likely to be eaten. Java fern, African fern, and hornwort won’t even be eaten by goldies, and they eat everything.

A good guide is to avoid most bottomfeeders simply because if they don’t eat the plants, they will thrash them unless they are small.
Silver dollars are the most notorious herbivores, but most fish in general won’t touch them.
Plants that are generally untouchable are anubias (too tough), java fern (tastes funny), java moss (too stringy). You can use this same train of logic to keep the fish from biting.
